Boo!!!!

Did I scare ya? I bet I did. The last three weeks you've been checking my blog for a new post and have always been let down. Today you checked expecting to see "7 Quirks" yet once again.....but AAAAAHHHHHH! A new post!!! When your heart rate has gone down...please continue to read.

Update.
My mom was in town for two weeks. She came on October 8th and left on the 22nd. It was a great visit. My Dad was here for a couple of days....twice. Dallon and Emili come up from St. George for a weekend. The next weekend Taylor and Tara came down from Boise. Then of course Trent and Jen already live here. So we got to see most our family...except for my most favorite sister of all time, Leslie. :o(

We did a lot of the usual stuff. We went to Bouncin' off the Walls and Jungle Jim's (all in the same day!!! ) We painted pumpkins with all the kids. We went shopping at the Gateway and Gardner Village. (Which by the way has totally inspired me to get a witches costume. I really ought to invest in one and just wear it every year. My mom used to have one, she'd paint her face green, and hand out candy to all the kids. So last night I bought a black cape...a orange and black witches hat, and a wig. That will do for this year...we'll build on in next year.) My mom took me to Winger's TWICE!!!!!! She's so good to me. We threw a Pampered Chef party...which I got over $400 in sales and thus recieved $60 free product and two 1/2 priced items. So now I am all set with my stoneware, bamboo spoons, medium scoops, flour/sugar shaker, citrus press, baker's roller and a new cutting board. I am super excited to make casseroles, cookies, waffles sprinkled with powdered sugar, pizza, cut some meat, and squeeze some lemons.

I was on bedrest for three days one weekend because I had some spotting, but after an ultrasound and a visit with the doctor we found nothing wrong and it hasn't happened since. What a relief. After three days of laying in bed and sitting on my butt all day, my legs hurt, my hips hurt, and bum hurt. All I wanted to do was go to Curves and workout. I have more sympathy for ladies who have to do months of bedrest. Not fun. Not at all.

We went out to eat....Winger's (twice!!), Su Casa, Johnny Carino's, Red Robin, Einsteins Bagels (which have a great lunch menu...I never knew), and of course Del Taco. I never had the chance to go to Cafe Rio during the visit but you can't say I didn't try. We ended up at Su Casa that time. Sister in law Emili always get's sick when she goes to Cafe Rio. Brother Trent suggested Su Casa (which he ALWAYS does....) So get this....my mom comes to me and says..."What about Su Casa instead? It's still mexican food and Emili won't get sick...so it's a compromise." Was she serious???!!!! Does she not know the The Cafe Rio cannot be compromised or compared. It is in an elite class of it's own. I do not go to Cafe Rio to fulfill a Mexican food craving. I go to Cafe Rio to experience the awesomeness of the House Dressing on a bed of lettuce served with rice, grilled chicken and pico sauce. No...Cafe Rio cannot be compromised. Su Casa is not the same thing. I was so amused by her rationale, it put me in a good mood and I agreed to give up the fight and go to Su Casa. I got the taco salad. It was okay. I tried not to think of what I was missing. Matt took me to Cafe Rio a few days later.

Matt and my mom left the same day. Matt went fishing with his brothers and dad up to Flaming Gorge. It's a yearly trip. The get a fishing guide and fish for six hours everyday. He loves it and looks forward to it every year. I'm happy for him he gets to go... I just wish us girls had the same opportunity provided for them. Matt's brother pays for the fishing guide. Which is the biggest and most expensive part of the trip. Then they split the other costs. Matt left home with $100 and came back with some. It really is a special trip for the boys and I'm not taking anything away from that...it's just that i'm a little jealous. I want three days aways from the husband and kid with the girls and only have to spend $100.

And by the way....I'm pregnant.

I really was starting to get worried! I knew your mom was in town, but jeesh...give us somethin'!

Sounds like you had lots of fun. I am learning so much about you through this little blog...who knew you were so passionate about food!! You should contact them about becoming their marketing specialist. HA HA. But, seriously, I'm glad you're okay and so is the little one.

I was starting to worry about you! I'm glad you are okay- just too busy having fun to care about us in bloggy land.

Now, girl, I can totally save your bacon (and wallet) with the Cafe' Rio House Dressing. I know how to make it. I found a recipe online but it wasn't quite right so I tweeked it and now mine is as good (or maybe slightly better) than theirs and it's easy! I agree with you that it's laughable to compare CR to Su Casa (which, by the way, always makes me feel a little sick when I eat there- has since I went a lot with college roomies 'back in the day').

Here's the recipe (I did a separate post for clarity and so you'd feel special getting more comments! LOL!)

Cindy's Creamy Tomatillo Dressing

3 Tomatillos, husked, washed, quartered.
1 Jalepeno, washed, halved, seeded
1 lime
1 clove garlic
1/2 bunch (or more) fresh cliantro

1 Packet Hidden Valley Buttermilk Ranch Dressing
1 cup Mayo (not the light stuff)
1 cup buttermilk.

Spray a cookie sheet with cooking spray then place jalepenos and tomatillos on the sheet. Bake at 400 degrees for about 20 minutes until the tomatillos are all soft and squishy and the jalepeno has some black on the skin.

Remove from oven. Squish most of the seeds out of the tomatillos- you'll have mostly just the rinds.

Place ALL ingredients into a blender and whirl it all together. Let it sit for an hour in the fridge if you can wait that long.

You will probably ultimately not thank me for this recipe since it's addictive.

Crap- I didn't tell you that you DON'T put the tomatillo seeds you squished out in the blender. You just want the rind parts.

The other online recipes have you use raw tomatillos and it gives the whole thing a weird taste and crunchy seeds. Yuck! The roasted flavor of the tomatillos and jalepenos help make this so good.

Hey Thanks for the recipe! And you are absolutely right Cafe Rio is in a class all by itself and one that always wins in our family. Although after seeing the word Einstiens I really want one of those. CrAP! It's Sunday. Well maybe tomorrow. I am glad that you had so much fun with your family!!! Good job on being pregnant too!

Kelly- yeah...I threw that in because of you. I loved your "update" post and then you threw that in at the end. It just seemed a great way to end. Ha ha! :o)

Sorry about not being a big Cafe Rio fan. i TOTALLY appreciate your compromise and HUGE SACRIFICE in going to su casa instead. So grateful. Maybe I just always order the wrong thing at cafe rio... Anyhow, you're the best.

Well, I hate to burst your bubble or appear to be some sort of traitor, but Trevor and I are much bigger fans of Costa Vida. It's pretty much the same as Cafe Rio in every way except their pork is better. But, I don't think their tortillas are QUITE as good. So next time you need to compromise, tell them Costa Vida and see if they fall for it...

And by the way I'm pregnant

I try to make everyone happy believe it or not. It is impossible, though. One of the biggest weaknesses our family has is the inability to choose a place to eat without conflict and hurt feelings. Peoples passions are so tied up in there food fantasy. I thought I was being quite clever attempting a compromise. Mothers can never win the whole war, just parts at a time. How many times did you eat at winger's Lisa? I really don't like Wingers at all. Do mother's sacrifice, oh yea, trust me, they do. WE can only do our best and hope there is charity in our children's hearts. Love ya skw
